12 Days of Christmas {Goodies}: Eggnog (Soy, Fish, Wheat and Nut-Free, Can Be Milk-Free and Diabetic Friendly)

My husband LOVES Eggnog (sans alcohol).  I mean LOVES it.  He looks forward to this time of year so he can purchase it.  My mother is also a fan, but I have never been.  This particular eggnog, however, I don't mind.  It's not too thick (though it could be if you made it with whole milk or whipping cream or half and half or stirred in some sweetened whipped cream like some sites suggest before serving) and the flavor is nice without being in-your-face-over-the-top.  It tastes like a good custard should, in my opinion.   I like that the eggs are cooked, too.  That's a plus. :)

This recipe is slightly modified from one I found on Allrecipes.com as posted by   It is soy (if you use all soy-free ingredients), fish, wheat and nut-free, and can be milk-free and diabetic friendly (see variations).  I hope you enjoy my version of a holiday classic.

Eggnog
1 dozen Eggs

1/2 Cup white sugar

Dash of salt

8 Cups milk, divided

2 teaspoons vanilla extract

1/4 teaspoon ground nutmeg

  1. Place the eggs, sugar and salt into a large pot and whisk until light colored and frothy.
  2. Whisk in 2 Cups of the milk until thoroughly blended.  (Note: You can use any percent milk (skim, whole, 2%, etc.).  The more milk fat you have, though, the thicker your custard will be.  You could even make this with half and half or whipping cream or a mixture of all of the above, if desired, but those choices are not always allergy-friendly, so use those with caution.)
  3. Place the pan over medium heat, continuing to stir until the mixture thickens and coats the back of a wooden spoon; about 5 minutes.
  4. Remove mixture from the heat and allow to stand 5 minutes.
  5. Stir in the remaining 6 Cups of milk, vanilla extract and nutmeg.
  6. Refrigerate for at least 2 hours to cool thoroughly before serving.
Makes 12 servings.



Variations:
  • Milk-Free: Use a dairy-free milk in place of the milk (I recommend SoDelicious). Just make sure your substitutions fit all your allergen needs.
  • Diabetic Friendly: Use an "approved for baking" sugar substitute (such as Splenda or Truvia) for the sugar. 
  • Garnish: Top each serving with sweetened whipped cream and/or ground nutmeg before serving.
  • Frothy Top: This is a neat trick I learned from my friend Heidi over at One Creative MommyTo get a nice frothy top, add the mixture to the blender and blend for a few seconds before serving.  It's genius and works like a charm...and it makes people think you're a pro in the kitchen. :)
  • Thicker Eggnog: If you want your Eggnog thicker, you can stir in sweetened whipped cream before serving (amount based on preference, but I'd say anywhere from 1 to 6 Cups).
