Weekly Weigh In 2020: Week 35, August 31, 2020

 

Weekly Weigh In will go live every Monday, and it will share how I'm doing health-wise, and it will give me more accountability with my health.



Here is my thirty-fifth weigh in of 2020:



1. The Selfie: The selfie is me as of today, August 31, 2020.

2. Weight: My weight went down a pound again.  I'll take it.  Here's hoping the weight loss keeps up.

3. Health News: I averaged just over 8,100 steps per day last week.  I am hoping to get at least my 6,000 steps per day average this week, and will do so as long as I can be out and about.  I do best when I get in a daily walk or 2, so I am going to really push to do this even if the weather isn't 100%.

I had my ultrasound to check on my PCOS last week, and my TeleHealth with the OBGYN is in a few days to discuss the results.  I'll keep you posted.

My physical went well, and my labs look good.  We did decide that I would be best served seeing a rheumatologist vs. an endocrinologist to check on my arrhythmia due to my medical history, so I've cancelled my endocrinologist appointment, and my rheumatologist referral has been done and I hope to have an appointment date soon.  After I have my rheumatologist appointment, then we'll see if I need to see a cardiologist and/or endocrinologist, if I need to have more tests done, etc.  I'll keep you posted in this regard, too.

4. Diet News:  I feel like this is a continued work in progress.  I'm really struggling to find variety, but I feel like I'll get there.  At this point, my body is giving me way too many rules, but I'm confident that I will find a way to make those rules work for me.  It is just going to take some time to figure it all out.  For now, lack of variety is where I'm at.  It is what it is.

5. Other News: Please continue to pray for my middle kid.  For nearly 11 months now, he has been dealing with an unknown health issue.  He is having a few issues here and there, and we're waiting on some things yet, but otherwise he is pretty stable (as long as he takes his medication).  We'd like to be able to figure out what the source of the issue is so that he can go off the medication if at all possible, though.  If you'd like more of a current update/rundown on his condition, you can click here.

As to our week, it's going to be another busy week.  I appreciate your prayers as we navigate a few family health issues (my hubby is having some issues that are either the beginnings of appendicitis or something that may eventually require a referral to a GI doctor, my oldest is healing from wisdom teeth extractions, mine and my middle kid's health issues, and a few other things as well), getting ready to start school back up next week, and needing to do some home repairs before winter hits.  Thanks so much!

Family Favorites - August 2020: Gluten-Free and Dairy-Free Chocolate Chip Zucchini Bread (Wheat, Milk, Fish and Nut-Free, Can Be Soy and Egg-Free)



I decided to keep posting a family favorite recipe from the blog (with any adaptions that we use regularly, if applicable) on the fourth Friday or Saturday of every month this year.  {Sorry for the late post!  Life has been more than a little crazy lately!}  This recipe will be one that we make quite often and that we all enjoy greatly.  This post is the eighth Family Favorites recipe of 2020.

This month's Family Favorite recipe is Gluten-Free and Dairy-Free Chocolate Chip Zucchini Bread.  This is basically a reposting of my original Zucchini Bread recipe made gluten and dairy-free with {allergy-friendly} chocolate chips added.  It is a family favorite for several reasons.  It's one of those "healthier for you" recipes because of the zucchini, but it tastes like a "not so healthy for you" recipe because of the chocolate chips.  It's also just delicious.  It is also wheat, milk, fish and nut-free (if all your ingredients are), and can be soy and egg-free (see variations).  There are also a lot of things you can add in, if desired, to truly make this recipe all your own.  What's not to love?  Give it a try - you won't be sorry!

Note: The gluten-free flour I recommend does not technically contain soy, but it does contain xantham gum (see "Soy-Free" under variations for more details) which can cause issues for people with soy sensitivities or allergies.  For this reason, I will not claim that this recipe is soy-free.  I will share a soy-free alternative in variations, though.


Gluten-Free and Dairy-Free Chocolate Chip Zucchini Bread


3 Cups Cup-for-Cup gluten-free flour blend
(We normally use and highly recommend Namaste Gluten-Free Perfect Flour Blend.)

1 teaspoon salt
(We normally use Himalayan pink salt.)

1 teaspoon baking soda

1 teaspoon gluten-free baking powder

1 Tablespoon ground cinnamon


3 large eggs

1 Cup extra virgin olive oil

2 1/4 Cups white sugar
(We always use cane sugar.)

1 Tablespoon gluten-free vanilla extract

2 Cups grated zucchini (DO NOT DRAIN!)


1. Grease and flour two 8x4 pans with fat of choice.  (Note: Oil works just as well as shortening, butter, lard, etc. to grease the pan with.  Use the same type of gluten-free flour that you are using in your recipe to flour your pan with.)

2. Preheat the oven to 325oF.

3. Mix gluten-free flour, salt, baking soda, baking powder, cinnamon and chocolate chips/chunks together in a medium bowl; set aside.  (Note: Mixing the chocolate chips in with the flour keeps the chips from sinking to the bottom of your bread later.  Also, use the type of chocolate you like best - chips or chunks.  You can even use a combination if you wish.)

4. In another large bowl, beat eggs, oil, vanilla and sugar until well blended.

5. Add dry ingredients to the creamed sugar mixture and beat well.

6. Stir in zucchini until well combined. (Note: The grated zucchini should be very wet - DO NOT DRAIN!  The moisture is needed.)

7. Pour batter into prepared pans and bake for 40 to 60 minutes or until tester/toothpick inserted into the center comes out clean.

8. Cool in pan on wire rack for 20 minutes before removing the bread from the pans.

9. Allow the bread to cool completely on the wire rack before enjoying.

Makes two 8x4 loaves.

Variations (Please keep your individual dietary/allergen needs in mind when using substitutions!):
  • Soy-Free: Namaste Gluten-Free Perfect Flour Blend does not claim to contain soy, but it does contain xanthan gum, which can cause issues with people who have soy sensitivities and allergies.  For these reasons, I will not claim that this recipe is soy-free.  You can use regular flour (if you can have it) or a soy-free, gluten-free flour of your choice.  Keep in mind that if your gluten-free blend doesn't contain guar gum or xanthan gum, you may need to add between 3/4 to 3 teaspoons of ground flax seed, guar gum or xanthan gum to help with textural issues, too.  You'll have to make sure all of your ingredients are soy-free, too.
      
  • Egg-Free: Use any of these egg substitution ideas here in place of the eggs.  

  • Zucchini Nut Bread: Add 1 Cup walnuts or pecan pieces with the dry ingredients and make as directed.  You can add the nuts in place of the chocolate chips or along with.  Just make sure your total add-ins are no more than 2 Cups.
       
  • Carrot Zucchini Bread: Either reduce the zucchini to 1 Cup and add 1 Cup grated carrots, or keep it 2 Cups zucchini and add 1/2 to 1 Cups carrots.
      
  • Reduce the oil: Reduce the oil to 1/2 Cup and add 1/2 Cup natural applesauce.
       
  • Other stir-in ideas: Stir in up to 1 Cup of golden raisins, sunflower seed, pepitas (pumpkin seeds), other types of chocolate chips (if you can have them),  chopped up apple and/or crushed pineapple.  You can do these add-ins in place of the allergy-friendly chocolate chips or along with.  Please try to keep your add-ins to a total of no more than 2 Cups, though.  Also, please note that if you are adding crushed pineapple, that that will greatly change the liquid content, and I recommend reducing the oil by 1/2 if you use it.  If you add the pineapple and use the applesauce, I'd say use 1 Cup total (1/2 Cup of each) and 1/2 Cup of oil so that your loaf cooks up properly.
       
  • Zucchini Carrot Cake: Follow the recipe for Carrot Zucchini Bread, but reduce the oil to 1/2 Cup and add 1/2 Cup natural apple sauce.  Bake in a 13x9 pan instead of loaf pans and cook at 325oF for 40-45 minutes or until a tester/toothpick inserted into the center comes out clean.  Top with Sweetened Whipped Cream or frost with Vanilla Buttercream or the Cream Cheese Frosting Listed below, if desired and they fit your allergen needs.  You can also top it with or stir in chopped walnuts or pecans if it doesn't need to be nut-free.  Note: You can try your hand at making a soy-free version of cream cheese from scratch if you like (I've not tried it, so I can't vouch for the taste, though.). You can also try using a dairy-free, soy-free "butter" (Earth Balance has one) if you want to make the buttercream dairy and soy-free.  There is a recipe for a dairy and soy-free "cream cheese" frosting here, but it is not nut-free and I've never tried it, so I cannot vouch for the taste.  You can also just dust the cake with powdered sugar or eat it plain as well.
Cream Cheese Frosting
(Adapted from a recipe on allrecipes.com submitted by Janni to be egg, fish, wheat, and nut-free)
1 package cream cheese (8 oz.), softened
1/4 Cup full-fat, salted butter, softened
1-1 1/2 teaspoons vanilla
dash of salt
1 to 2 Cups powdered sugar

1. Cream butter and cream cheese in a medium bowl until creamy.
2. Mix in vanilla and salt until well blended.
3. Gradually stir in the powdered sugar until well incorporated.
4. Store in the refrigerator until ready to use.

Variation:
  • Chocolate Cream Cheese Frosting: Stir in 1/4 to 1/2 Cup cocoa powder with the powdered sugar.

Here is my thirty-fourth weigh in of 2020:



1. The Selfie: The selfie is me as of today, August 24, 2020.

2. Weight: My weight went down a pound again.  I'll take it, though I wish it were more.  Here's hoping the weight loss keeps up.

3. Health News: I averaged just over 8,300 steps per day last week.  I am hoping to get at least my 6,000 steps per day average this week, and will do so as long as I can be out and about.

I am to have my ultrasound to check on my PCOS tonight, and my TeleHealth with the OBGYN is next week to discuss the results.  I'll keep you posted.

I am now taking a double dose of my Coreg due to more arrhythmia and blood pressure issues.  My physical is on Friday, and I will find out if the doctor wants me to go to see a cardiologist, endocrinologist, rheumatologist, a combination of a few of these, or all 3 about my continued heart issues.  I'll keep you posted on this, too.

4. Diet News:  This is a continued frustration.  I have to read labels very carefully, and I have to follow my dietary restrictions religiously.  I also have to be careful that I don't have too much salt now, too, because I'm starting to have some possible issues with blood pressure.  I am hoping that we can get to the bottom of this arrhythmia/blood pressure issue soon so that I don't have to be quite so restrictive, but I realize this may be the new normal, too.  Please pray that we figure out a diet plan that works and that is well-balanced and/or that we can get some medical answers soon.  Thanks!

5. Here is my thirty-third weigh in of 2020:




1. The Selfie: The selfie is me as of today, August 17, 2020.

2. Weight: My weight went down a pound.  I'll take it, though I wish it were more.  Here's hoping the weight loss keeps up.

3. Health News: I averaged just over 8,000 steps per day last week.  I am hoping to get at least my 6,000 steps per day average this week, and will do so as long as I can be out and about.

My OBGYN appointment ended up getting cancelled.  I am to have my ultrasound to check on my PCOS done at the hospital instead and then a TeleHealth with my OBGYN after that.  I have no idea how long that will take, but hopefully it won't take too long.  We shall see.

I also talked to my doctor about a few concerns that we will discuss in more detail when I see her the end of next week.  After that appointment, I should have a little more direction in regards to my arrhythmia issues.  Prayers appreciated!

4. Diet News:  I have good days and bad days, but I'm working towards having just good days.  I feel a bit frustrated in this regard because, just when I think I have it figured out, I don't.  I am learning that there are just some things I cannot eat, even in a very small amount, and that's frustrating.  I am having a lot of trouble finding foods that are safe for me, and that can lead to boring food choices, and that's never fun.  Pray that I find some more food options for me soon so that I'm not tempted to eat things I shouldn't.  Thanks! 

5. Other News: Please continue to pray for my middle kid.  For nearly 10 and a half months now, he has been dealing with an unknown health issue.  He appears to be stable (as long as he takes his medication), but we'd like to be able to figure out what the source of the issue is so that he can go off the medication if at all possible.  We're still in the process of getting his lift, and he is going to have an EEG soon to see just how impactful his pulsing-light-induced headaches are and to make sure they aren't seizures.  If you'd like more of a current update/rundown on his condition, you can click here.

As to our week, it should be pretty busy.  We're still working on getting our water/washer fixed, but thankfully I'm still able to do laundry in small loads and nothing else is urgent, so there's that.  As long as we get it fixed before the snow flies, that's all that matters.  We have various other things going on, but we may end up being able to breathe a little by the weekend.  We shall see!

Recent Reflections - August 2020: The In-Between

 


This is the eighth Recent Reflections post of 2020.  Recent Reflections goes live the third Friday or Saturday of each month.  Each Recent Reflections post covers something that I'm reflecting on.  If you'd like to share a post with a similar theme, feel free to leave a comment with a link to your post, and I'll hop on over and leave a comment (and maybe some other readers will, too).

This month, I will be reflecting on the in-between.


Right now, I find myself surrounded by a lot of in-betweens.

We're in-between a past normal and new normal that I pray doesn't stay that way.  {COVID-19, feel free to leave any time now!}  We fear (if we let ourselves), we don't know how to navigate this world with all its mandates and resulting hardships, and we simply just find ourselves wondering, "What's next?" and "Will it ever end?"  Truth is, I don't know, but I'm going to just let myself exist in the in-between to the best of my ability and not worry about tomorrow.  Tomorrow is God's "worry", and I am going to do my best to not let it become mine.  I am choosing to enjoy the day, come what may, and live as {old} normal a life as I can for me and mine.

My oldest (and soon to be his little brother who is not even a year and a half behind him) is in-between being an adult and a teenager - 17 is a rough age.  He's turning into a marvelous man, but he still struggles with the adulting headed his way.  I see it.  He wants to decide for himself, he wants to not have to ask permission for some things, he wants to lead as God intended him to, but he struggles with knowing when to make a decision on his own and when to ask for advice.  Truth is, I want him to know that asking for help or guidance is not a weakness, but rather a great strength.  God wants us to turn to Him with everything, and our children learn to go to Him by learning to come to us first no matter what the situation.  It is our job to point our children to the Lord and to seek His wisdom.  We often fail when we go it alone, and I never want my children to feel like they are alone, because they aren't.  So, I will keep being there, being that cheerleader and guide (same as his dad), and one day he (and his siblings) will have arrived at adulthood with the ability to still seek our guidance, but wanting God's will most (that's our prayer, anyway).

Our youngest is in the in-between age of child and teen and all the change that puberty brings.  It's been hard on her in a lot of ways, and she's very curious about all of the things that come with growing up.  There's been a lot of discussions and there'll be dozen if not hundreds more.  Truth is, I'd love to keep her a little girl forever.  I don't want her growing up so fast, but here it is.  So, instead, I will raise her to love the Lord, to seek His guidance, to not keep secrets from us, and to ask us anything and everything.  We have an "our door is always open" policy when it comes to the need to talk.  Occasionally that means a midnight (or later) chat, but we want our kids to know that nothing is more important to us than them.  This next few years especially will be crazy for her...and I plan on being there for each and every insane moment of it all.

There are other areas of our lives that are also in the in-between stages.  We've been married 20 years - we're not quite middle aged, but it approaches quickly and our kids are nearly old enough to get married and have kids of their own.  My health and different family members' health are in some new territories right now, and we don't know how all those things will pan out.  We are in the in-betweens of having a house with half the improvements we've planned done and many more needed yet.  There are so many things I could mention, but the details don't matter.  What matters is that, in the in-between, God is there, too.  He's never left, and He will be by my side through it all.  That's the best comfort of all.

In closing, I will just share this Psalm, and I hope it can be a comfort to you in this world of in-between as it has been to me.


1 O LORD, thou hast searched me, and known me.

2 Thou knowest my downsitting and mine uprising, thou understandest my thought afar off.

3 Thou compassest my path and my lying down, and art acquainted with all my ways.

4 For there is not a word in my tongue, but, lo, O LORD, thou knowest it altogether.

Weekly Weigh In 2020: Week 32, August 10, 2020

 

Weekly Weigh In will go live every Monday, and it will share how I'm doing health-wise, and it will give me more accountability with my health.



Here is my thirty-second weigh in of 2020:



1. The Selfie: The selfie is me as of today, August 10, 2020.

2. Weight: My weight is went is up again nearly 5 pounds.  Part of that is due to the humid weather and part of it is due to me dealing with more inflammation and water retention lately, so I hope to be able to lose the weight this week.  I'm also going to be making sure that I am eating only when hungry and eating right for me.  That should help, too.

3. Health News: I averaged just over 7,200 steps per day last week.  I am hoping to get at least my 6,000 steps per day average this week, and will do so as long as I can be out and about.

I'm still having issues with some mild seasonal allergies and with my back/hips, especially on my left side (chiropractic is helping with the back/hip issues, though).  I'm also dealing with some other health issues that I plan on speaking with my doctor about when I see her in a few weeks.  Depending on what she says, I could end up having more labs and maybe even end up seeing a different specialist.  I'll keep you posted, and I appreciate your prayers.

I'm supposed to have my OBGYN appointment to check on my PCOS next week.  I'm not sure if I'll still have it due to all the restrictions still in place, but I should find that out soon enough.  Please pray that I won't have to have it rescheduled again, or that, if I do, I'll be able to get in soon.  Thanks!

4. Diet News:  Last week, I had more carbs than normal, and I paid for it.  I've also had times where I thought I ate all foods that were ok for me only to have issues.  When I thought about it later on, I realized that I'd (in most cases) either overeaten the foods that I can only have a little bit of, eaten them at the wrong time of day, or I had eaten something new that didn't have enough fat, protein or fiber to counteract the carbs.  Needless to say, it was a bit of a frustrating week.  I am going to work harder on eating better (for me) this week.  

5. 1. The Selfie: The selfie is me as of today, August 3, 2020.

2. Weight: My weight is went is down about 3 pounds.  I am thrilled, and hoping the weight loss continues.

3. Health News: I averaged just over 9,000 steps per day last week.  I am hoping to get at least my 6,000 steps per day average this week, and will do so as long as I can be out and about.

I'm feeling pretty good heart/health-wise, but I'm having issues with some mild seasonal allergies (ragweed is my nemesis) and with my back/hips, especially on my left side.  I was not able to get into the chiropractor last week, and that caught up to me by the weekend.  I had a really hard time getting around yesterday, but I am a little better today.  I am hoping to get into the chiropractor tomorrow or Wednesday which should help the back/hip issue tremendously.

Diet News:  I am doing pretty good, but I'm still working on variety.  It's slow going, but I'm getting there.  I always feel better when I eat right for me, and I feel terrible when I don't, so that's good motivation to stay away from the bad-for-me stuff.  All in all, I can't complain in the diet compartment.

5. Other News: Please continue to pray for my middle kid.  For 10 months now, he has been dealing with an unknown health issue.  He appears to be stable (as long as he takes his medication), but we'd like to be able to figure out what the source of the issue is so that he can go off the medication if at all possible.  His doctor's appointment went well, and we have a lift in the works for the leg length discrepancy, and she is pleased that he is doing well.  There are no immediate plans to see a specialist (other than the chiropractor), but we discussed scenarios that would make that necessary.  If you'd like more of a current update/rundown on his condition, you can click here.

As to our week, it is going to be a little busy, but hopefully not too bad.  We still need to get the water/washer issue fixed, but it still isn't emergent at this point, so that's good.  Please pray that we will be able to get ahold of the right people so that we can get the water fixed sooner than later (we're having trouble getting ahold of them, and I'm sure COVID-19 has something to do with that).  Thanks!
